Garlic Parmesan Tortilla Chips

20160621_192205Last night I was looking for a quick and healthy dinner to make for my hubby and I. We decided on making our own salads with various toppings  with crispy chicken as the primary protein. I decided I wanted a bit of crunch action in my salad so I threw together this recipe and it worked out really well. It is nice when you try a recipe of your own and it works out 🙂 These are really easy to make and are made with ingredients you probably already have around the house. It is also a good way to use up tortillas. We had one left in the fridge and it made 16 chips. You could serve these chips with a salsa or a pico de gallo or you could use these chips as a base for an amazing batch of nachos. Alternatively, you could make up a sweet version of these chips (brush with butter and then sprinkle with cinnamon sugar) and serve them with an apple cinnamon salsa or fresh berry salsa. Honestly there are so many avenues you can take these chips. My hubby and I couldn’t help but eat most of these chips on their own but don’t worry we had like 5 left for our salads 😛

Ingredients:

  • 1 large tortilla shell (makes 16 chips)
  • 2-3 tablespoons of melted butter
  • 1/4-1/2 tsp of garlic powder
  • dried basil to sprinkle
  • dried parsley to sprinkle
  • 1/4-1/3 cup of grated or finely chopped parmesan

Instructions:

  1. Preheat oven to 400 degrees F
  2. Take your tortilla and cut it into 16 pieces. This is done by first cutting the tortilla into quarters. Pile the four pieces on top of each other and cut in half again so you have 8 pieces. Pile the 8 pieces on top of each other and cut in half again.
  3. Spread out pieces in one layer on a baking sheet.
  4. Melt 2 tablespoons of butter in microwave and add 1/4 tsp of garlic powder. Brush this mixture evenly onto the chips.
  5. Put into the oven for about 5 minutes or until they start to turn golden brown.
  6. Take out of the oven and flip over. Melt the remaining butter and add 1/4 tsp of garlic powder. Brush the chips with this mixture again and put in the oven for about 2-3 minutes or until the chips turn golden brown on this other side.
  7. Pull out of the oven and sprinkle with parmesan cheese.
  8. Place back into oven until the cheese is just melted and just starting to turn golden brown. The cheese will burn quickly so be careful. This should take less than a minute
  9. Take out the chips and place on a plate. Sprinkle dried basil and dried parsley over top.
  10. Try not to burn your fingertips too much as you dig in… it will be too hard to wait until they are cooled 🙂
